Cooking Demonstration with Chef Anand Jayapal!
11:00 am on the Main Stage (Located near Lord & Taylor, 1st Floor of the Mall).
Anand Jayapal takes on Gluten and Nut Free cooking and explains how life changed after his daughter was diagnosed with a peanut allergy.
Anand Jayapal, of “Chef AJ” as he is known, is executive chef of Swifty’s in Troy. He has a specialty sensitivity and knowledge about food allergies and intolerances, since he has a daughter with a peanut allergy. AJ has received numerous awards in various competitions locally, nationally and internationally. A.J. has received exceptional experience by working such events as the James Beard Foundation Awards and Annual Chef and Champagne. He has had the privilege of working with prominent area culinarians as well as internationally known chefs such as Wolfgang Puck and Jacques Pepin.
While working with accomplished chefs is an honor for him, nothing gives him greater pleasure then to use his knowledge to benefit others. He takes pleasure in giving culinary demonstrations and donating his time to charitable organizations such as the NFL Alumni Golf, Living Resource, and the Double H Ranch to name a few. Giving back to the community is “both rewarding and essential” to him.
Chef A.J. has also taken the initiative to create his own line of sauces- Miss Sydney’s Secret Family Recipes, LLC. He is working with his family to “create the next new condiment.” The formation of this company as a family owned and operated business is a life long dream for A.J. and the start of a new chapter in his culinary career.

Jodie launched her own blog, www.jodiefitz.com, in fall 2011 to expand her love for sharing recipes, ways to serve ‘Real Food Fast’, taste testing fun, and family activities. She knows that cooking for families with food allergies and intolerances can be a challenge! Jody is the author of Cooking Up Fun, an interactive children’s cookbook.

Gluten Free Baking Demo by Jessica Smith of Different Blend Bakery
Jessica Smith wanted to create that special place for people with celiac disease,… that environment where people could say, “Wow, I can eat anything here!” Jessica was forced to accept a bitter irony in her first year studying at the Culinary Institute of America. Jessica was an aspiring pastry chef who was diagnosed with celiac disease. “All of the sudden, you are told that you can’t eat any of the stuff you’re going to be making,” she said. So Jessica opened Different Blend Bakery in late 2015 and hasn’t slowed down one bit! The successful Guilderland pastry shop offers entirely gluten free treats in a spacious dedicated facility.

The “Ask the Doctor Booth” presented by Saratoga Schenectady Gastroenterology Associates, PC
Stop by the Saratoga Schenectady Gastroenterology Associates booth to discuss and questions regarding celiac disease, gluten intolerance, and other gastrointestinal issues/concerns. The booth will feature renowned physician, Arthur H. Ostrov, M.D. Dr. Ostrov joined the practice in 1981. He is currently seeing outpatients in our Saratoga & Burnt Hills offices and has a special interest in Inflammatory Bowel Disease. He is the director of our biologic infusion center. He graduated from the University of Bologna with honors in 1975. He did his internship and residency at St. Mary's Hospital in Rochester. He then did his fellowship at Albany Medical Center. Dr. Ostrov is Board Certified in Gastroenterology and is the prior chairperson for the Dept. of Medicine at Saratoga Hospital.
